Because of it's mixed cultures, Creole food is a melting pot of exotic flavors, it's a colorful fusion. I love the rare and exotic and if you were lucky enough to peek into my cupboard you could be transcended to some far flung shores and regions. This menu just takes me back to the seaside with a fresh sea-breeze, warm weather and a cold delicious cocktail.

COD LAYERS w AVOCADO SAUCE
(fresh Cornwall cod loins flaked and mixed with scotch bonnet peppers, parsley, green peppercorns, sliced cucumber served with avocado sauce)

(live Spanish langoustines - small version of lobsters boiled in seasalt and served with a tropical salad of fruits and leaves)
