Learn all about Malaysian ‘Nyonya’ cuisine with Chef Guan Chua - the Supper Club host & food writer behind ‘The Boy Who Ate the World’ & contestant from Channel 4’s ‘The Taste’. A unique branch of Malaysian food that brings the best of Malay and Chinese food heritage together, ‘Nyonya’ cuisine is renowned for it’s complex flavour profile and use of exotic ingredients from lemongrass to fermented shrimp paste. By the end of the class, you will be able to recreate iconic Malaysian dishes from Curry ‘Kapitan’ (Captain’s Chicken Curry) to Tamarind Prawns.

  • Dried Shrimp Sambal (Chilli Paste) with Green Beans
  • Fried Tamarind Prawns
  • Nasi Lemak (Coconut Rice)


  • Preparation of traditional Malaysian spice pastes and marinades
  • How to cook a Malaysian Chicken Curry from scratch
  • Make an authentic Malaysian ‘sambal’ (chilli paste)
  • General knife skills
  • Frying & stir-frying skillls
