About Indian Food


Cooking in India is regarded as an art with many recipes being unwritten, handed down orally through the generations, with many of the most famous dishes weaved around ancient folk tales. The entire experience of preparation, cooking, and service symbolising love, friendship and hospitality.

The myriad of foods can be sub divided into the regions where there are 29 States and 7 main territories. In addition to this, there are also the different religions that influence the ingredients which define their own unique cuisines.

The geography of each region determines the type of food that is served; for example in coastal Goa, there is a lot of seafood and, due to influence of Portuguese colonisation, you will also find the extensive use of vinegar and pork.

The common link that they all share is based on Ayurvedic principles. The combinations of spices, both fresh and dried, are used to make a dish not only delicious but also medicinal.

Foods are served in specific combinations at certain times of the day in order to nourish the body and reap maximum health benefits.

Mumbai (Bombay) is considered the gateway to India. It is an island located on the West Coast of India. Many Indians have migrated to this region and as a result the foods reflect the melting pot of different ethnicities and religions. The local population tends to eat more chicken and seafood, richly combined with coconut and spices.

The street food has influences from all over India. The North Eastern regions with Mongolian and Chinese, the South with their array of rice based dishes, Central India with its variety of pulses, the North West combinations of vegetables and spices and in the East, distinctive flavours of mustard.

At Blue Lotus we can design delicious menus and dishes especially for your dietary and religious requirements.

Class Format

*Up to 4 people in a private residence.

*Introduction on basic spices used in Indian cooking

*You will have a hands on cooking class after which you will have a chance at enjoying your creations. 

*Possibility of taking your creations home.(Please bring containers to do this)

*This class can be catered for specific dietary requirements.

*Welcome to bring your own beverages to enjoy with your creations.
