An exciting collaboration with Mae from Pepe's Kitchen and a new cook in town; Nicole, a passionate Malaysian homecook and student who loves to share her cuisine!
We will serve 3 courses of traditional Filipino dishes and 3 courses of traditional Malaysian dishes, served one after the other. In this supper club you will experience both cultures in one sitting with a welcome Filipino cocktail and a final Malaysian milk tea to end.
An easy to get to rooftop dining room (weather permitting) in Canada water. Should the weather take a turn for the worst we will relocate to Pepe's Kitchen dining room in Marylebone with amazing views of the city.
FILIPINO MENU
Ukoy - A very morish Street Food favourite in the Philippines that you can find on many a street corner, shallow fried mini shrimps and vegetable fritters, served with a homemade pineapple & chili dipping sauce
Bisayan Humba - A popular dish from the Visaya region where Mae's Mum comes from, a warming family dish that makes you close your eyes and smile as you are reminded of home. Braised pork belly cooked with soy, sugar cane vinegar, palm sugar, fermented black beans, star anise, bay leaves and seasoning. Simmered for at least 4 hours served with fragrant white jasmine rice
Ensaladang Manga - A refreshing just-ripe mango salad that is the perfect partner to many Filipino 'Ulam' (main dishes). Cubed just-ripe mangoes, cucumbers and tomatoes and spring onions served with a calamansi (local Filipino sweet lime) and honey dressing
Braso de Mercedes - Literally meaning 'Mercedes arm', after over 350 years of colonisation by Spain, many dishes have Spanish names. A firm family favourite, this sweet soft meringue roulade, with a marshmallowy texture, filled with a calamansi (local Filipino sweet lime) custard filling is one of the ultimate Filipino desserts!
MAYLSIAN MENU
Kuih- Little parcels of steamed yam cake (kuih) filled with yam pieces and heh bee (dried shrimps), then topped with crispy shallots, spring onions and fresh chillies. Accompanied with hoisin and sweet chilli sauce
Malaysian chicken curry - There are a million variations to whip up this dish but this is my take on Nicole's mum's recipe, just how she would make it for us. A comfort dish of boiled potatoes, succulent corn fed chicken cooked and simmered in coconut milk with a homemade curry paste. Nothing fancy, but soothing enough to teleport me right back home.
Acar Awak - A traditional cold Malaysian pickle topped with a generous garnish of roasted crushed peanuts that is excellent for accompanying heavier curries. It is cold, sour, tangy, sweet and crunchy with a mild hint of spiciness. Have it with a spoonful of warm coconut rice and it will be a joyride for your taste buds!
Coconut rice - Jasmine rice with a hint of coconut.
Pineapple Tarts - A recipe stolen from Nicole's sister-in- law back home, these rustic little pastry gems are made from fresh and juicy pineapples cooked over slow medium fire, reduced to a luscious pineapple jam filling, which will be enclosed snugly within a buttery and crumbly pastry. Warning- Sizes and shapes may vary slightly as these are all individually handmade.
